Quarantine Cooking With Kim Carr – Chicken Tenders

Okay so for the last couple of weeks I think I have turned my oven on maybe 2 times to make pizza. I have been using my Air-Fryer now nonstop. Not only does it help cut down the cooking time, food comes out crispy which is a big win not only for my toddler but also my husband and I. Like most kids, my toddler can’t get enough of chicken nuggets. While I do love buying store bought, our favorites are the On-Cor chicken nuggets and the cheese chicken nuggets.
I do like to make them myself as well. Now before I had the air-fryer I would cook them in the oven and even the cast iron skillet. However, they would always turn out dry, and not to mention I would burn them to a crisp. That however is not the case with the air-fryer. These not only turn out nice and crispy, I am also not burning them. Plus they are healthier than the store bought ones. I don’t doubt these will be a winner in your house hold as well.
Italian Chicken Tenders
Ingredients 
1 Package of Chicken Breast Tenders they typically have 8-10 in them or you can use 2 Chicken Breast cut into slices
2 Tablespoons of Butter (Melted)
2 Tablespoons of Mayonnaise
1 Cup of Plain Panko Bread Crumbs
2 Teaspoons of Dijon Mustard
1 Teaspoon of McCormick Italian Seasoning
Non Stick Spray
Directions
Already my air-fryer has a non-stick coat, but I found spraying it anyways helps. Just do a light coat. Take the chicken tenders and place them on a double layer of paper towel and then pat them dry. Leave them off to the side. 
In a small shallow bowl mix the mayonnaise, mustard, Italian seasoning all together. In another small shallow bowl pour the panko crumbs in and mix in the melted butter. 

Now take one of the chicken tenders and place into the mayo mixture and spread on one side a nice thin coat. Then place that tender with the mayo side down into the panko bowl. Now cover the other side of the chicken with the mayo mixture. You next want to cover the whole chicken tender with panko crumbs. Once the tender is covered in panko crumbs place this into the basket of your air-fryer. Do these steps until all the tenders are in the basket of the air-fryer. Depending on the size of the tenders and your air-fryer you may have to do a couple batches. 

Once they are in the basket set your air-fryer to 400 degrees and you want cook these for about 8-9 minutes. Half way through the cook time you want to use tongs and flip them over and let them finish cooking. The coating on the tenders should look a golden brown and make sure that the chicken is cooked all the way through. Chicken should be at 165 degrees. If your chicken tenders are on the thicker side add a few more minutes till everything is cooked through. 

These come out nice and juicy and have a nice flavor to it that you really don’t need a dipping sauce, but if you are still looking for a dipping sauce I recommend the chicken dipping sauce from Great Value. Or of course ranch and ketchup always go well.
