Kim’s Instant Pot Meal Idea For The Week

As a working mom, I often struggle with what to feed my family for dinner during the week. I am horrible at meal planning. Tons of moms and dads do it, and I so envious of you for being able to not only plan out your meals for the week but also even meal prep too.
Thankfully someone invented the Instant Pot. So that people like me can get a great homemade meal cooked and on the table for dinner within and hour or so.
I got my Instant Pot this past Christmas. I am so in love with it. In fact, it gets used at least three times a week if not more. There are so many recipes out there for it, that I find myself spending hours on pinterest pinning them. Sometimes it gets overwhelming.
Each week I am going to feature one recipe that I have made with my Instant Pot, to help give you an idea of something that you can make that your whole family will enjoy….yes even the kids. This Week’s Instant Pot Recipe: Egg Roll Bowls
This recipe is a super fast and an easy one that you can make in under 20 minutes.
Ingredients:
1 lb ground pork or any other meat you would like to use instead
1 bag of pre-shredded cole slaw mix
1/2 – 1 cup of bone broth (I used about 3/4 cups)
1 Tbsp Soy Sauce or to Taste
1 Tbsp Garlic Powder or to Taste
1 Tbsp Ground Ginger or to Taste
1/2 tsp Pepper or to Taste
1/2 tsp Salt or to Taste
1 package of Egg Roll Wrappers
Vegetable Oil or Another type of Oil
How To Make:
Place your Instant Pot on Saute. Let it heat up. Then once it is hot, add in the Pork or your meat of choice. Add in Garlic Powder, Ground Ginger, Pepper, Salt. Start to brown the meat. Once it is just about brown add in the Soy Sauce. If you are using lean meats you will not need to drain.
*While your instant pot is heating up you can pre-heat the oven to 400 to make the Wonton Chips.
When the meat is all browned, turn the Instant Pot off and add in the Bone Broth. Then add in the Cole Slaw Mix on top. Do Not Stir… that is very important
Place the lid on and make sure the vent is in the sealed position.
Set your Instant Pot on Manual High Pressure for 0 minutes. Yes you can actually set it for 0. Just keep hitting the timer button until it reaches 0.
When the timer is up, do a quick release.
Open carefully and stir. You can then spoon into bowls and enjoy.
How To Make Wonton ChipsĀ 
Pre-heat the oven to 400 degrees while the Instant Pot is preheating on saute.
Cut the Egg Roll Wrappers into strips
Then brush on your oil to both sides. I used Avocado oil for this. You can use Vegetable Oil, Olive Oil or any other type you use. I also sprinkled a little salt on to taste you do not need to do this. I just found it added a little more flavor.
Bake in the oven for 4-5 minutes until they start to bubble and brown. You MUST watch these carefully because if you let them go too long they will burn fast.
Let them cool and then enjoy with your bowl.
